Brown stew chicken is chicken that is seasoned, browned and then simmered in a dark gravy made with onion, scallion, thyme, garlic, tomato, browning and Scotch bonnet pepper. The browning gives the chicken its deep colour and much of its flavour, and the gravy is what you spoon over the rice. In Kingston, Mama Chu Chu Restaurant and Sonia's Homestyle both serve it. In Montego Bay, Entree's serves it with rice and peas, and in Mandeville, Yaad Vibes Kitchen has it on the menu too.
The Jamaica Observer has called it a long-standing Jamaican dish tied to Sunday lunch and dinner, but you will find it on weekday menus as well. It belongs to the home cooking and cookshop tradition, and it turns up at homestyle restaurants, cookshops and takeaway counters.
Why the browning matters
Browning sauce is a dark caramel product that cooks use to colour and deepen gravies. Grace Foods describes its Grace Browning as a way to add rich colour to food, and recommends it for soups and stews to darken the broth. Its ingredients are water, caramel and salt. In brown stew chicken, browning sauce is often added to the gravy or marinade, but it does not replace seasoning, browning the chicken, frying the aromatics and a proper simmer.
Browning the chicken first builds colour and flavour before the gravy goes in.
Many cooks do both, browning the pieces first and adding a little browning to the sauce. Some cooks marinate the chicken first, and soy sauce or other seasoning may join the gravy. Too much browning can make the dish bitter or overly dark.
Brown stew fish and box food
The same method works for fish. Brown stew fish is fish that is lightly fried, then simmered in brown gravy with onion, scallion, thyme, garlic, tomato, hot pepper and browning. Snapper is commonly used, and king fish and other firm fish work too. Escovitch fish is different, because it is fried and finished with a sharp vinegar pickle of onions and peppers rather than with gravy. Mama Chu Chu and Sonia's both serve brown stew fish, and Sonia's also sells a whole fish version on its Sunday lunch menu.
Brown stew fish is fried first, then finished in gravy.
Box food is the takeaway format of a Jamaican cooked meal. The Takeout describes box food as a disposable container that commonly holds rice or rice and peas, a meat or fish dish and vegetables. Brown stew chicken suits it well, because the gravy travels and can be spooned over rice. The term describes the format, not a separate recipe, and a plate price is not automatically the box price. Check whether the price includes rice, vegetables, plantain and the container. For what box food costs across towns, see How Much Is a Box Food in Jamaica? Prices by Town.
Is it the same as jerk chicken?
No. Brown stew chicken is browned and then simmered in gravy. Jerk is rubbed or marinated with jerk seasoning and cooked over coals or wood, traditionally pimento wood, which gives it a smoky, charred flavour. The Jamaica Tourist Board's explainer on true jerk covers that tradition. Both can use Scotch bonnet, thyme, scallion, onion, garlic and pimento, but the cooking method and the finished dish are different. If jerk is on your list too, read Where to Get the Best Jerk Chicken in Jamaica, Parish by Parish.
How spicy is it?
It depends on the kitchen. Scotch bonnet is a traditional ingredient, and the Observer describes brown stew chicken as having deep caramel, salty and spicy flavours. Some cooks use a whole pepper for flavour with less heat, while others chop it into the gravy. A dish called brown stew is not automatically as hot as jerk. If heat matters to you, ask two things.
Sunday dinner and home cooking
Brown stew chicken is strongly tied to home cooking. In a Gleaner piece from April 2019, Dave Rodney wrote about backyard chickens raised for Sunday dinner and served with rice and peas, a custom he linked especially to rural and Kingston households in the 1960s and 1970s. Some families kept it up.
Rice and peas is the classic partner for brown stew chicken.
The dish is not limited to Sundays today. Mama Chu Chu serves it Monday to Saturday, and Yaad Vibes Kitchen lists it as a main course with no Sunday rule.
Sunday tables can also hold fricassee chicken, curry goat, oxtail, stew peas, fish or pork. Some restaurants call a Sunday plate fricassee chicken or brown stew whole fish instead of brown stew chicken. For the wider Sunday picture, read Jamaican Sunday Dinner: What It Is and Where to Get One.
The dish also belongs to a longer story. The National Library of Jamaica describes African culinary methods blended with the foods available on the island, and brown stew belongs to that wider history. It is a familiar home-style and cookshop preparation with many variations, and each household or cook makes it a little differently.
Reading the menu
Menus use several names for this dish. You may see brown stew chicken, stew chicken, brown-stewed chicken or fricassee chicken. They are not identical, because fricassee is a related Jamaican preparation, while brown stew signals the dark gravy and the browning step. If you are comparing a plate with a version you know from home, look at the cut of chicken, the depth of the gravy, whether the meat was browned first, the balance of thyme, scallion, onion and pepper, and the sides.
